Another Sweet Potato Hash

Because brunch is very important no matter who you are.

If you liked the skillet sweet potato hash, you’re going to love this one. Similar, but not the same!!

Cookware Needed:

  • 1 large pan
  • 1 large microwaveable bowl

Ingredients:

  • 3 medium sweet potatoes
  • 1 red bell pepper chopped
  • 1 yellow onion diced
  • 1 lb bacon
  • fresh sage leaves finely minced
  • 4-6 eggs
  • green onion chopped
  • Vegetable Oil
  • Garlic, minced
  • shredded cheese

Instructions:

  1. Chop up your sweet potatoes into evenly sized cubes. Season with 2 tablespoons vegetable oil, salt and pepper.
  2. Place sweet potato cubes into a large microwavable bowl, cover, and microwave for 5-6 minutes.
  3. While that is going, cook your bacon until crisp in the large pan. Once cooked, set aside but do not clean the pan. Once cool, chop the bacon up into small pieces.
  4. Using the same pan cook your onion and bell pepper until translucent at medium-high heat. Add in your minced garlic.
  5. Next throw in those sweet potatoes! Allow to cook until the potatoes begin to crisp (about 10 minutes).
  6. Add in your sage and bacon and allow to cook another minute.
  7. Using a spoon create small holes for your eggs. Crack an egg into each hole. Then cover with a lid at medium heat to allow them to cook through.
  8. Top with cheese and green onions and enjoy!
