Dang Quesadillas

Looking for a dank, slightly complicated but really simple recipe? Here you go!

Step 1: Make your own tortillas! Trust me it doesn’t have to be as hard as it sounds.

Tortillas Ingredients:

  • 2 cups all purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup vegetable oil
  • 3/4 cups warm water

Instructions:

  1. Combine all dry ingredients and stir with a fork.
  2. Slowly add oil, then water and continue mixing.
  3. Once it thickens, knead and form into a ball with your hands until smooth.
  4. Place into a bowl with a small amount of vegetable oil in the bottom to prevent sticking. Cover and place into refrigerator for 3 hours.
  5. After three hours, cut dough into 6 even pieces. Form each piece into a ball and then flatten with your fingers.
  6. Roll each piece into a thin, circle.
  7. Heat your cast iron skillet at med-high heat.
  8. Cook one tortilla at a time for about 20 seconds on each side until it starts to bubble. Flip until both sides are slightly brown.

Step 2: Marinate and sear your steak (6-8 hours)

Ingredients:

  • 1 lb steak
  • 1 gallon bag

Steak Marinade:

  • Smoked Paprika
  • Chili Powder
  • Cumin
  • Cilantro
  • Orange Juice
  • Lime Juice
  • Olive Oil
  • Salt & Pepper

Instructions:

  1. Combine all marinade ingredients in a bag with steak and let marinate for 6-8 hours.
  2. Heat your skillet at med-high heat.
  3. Sear each side of the steak until the internal temp reaches 145 degrees Fahrenheit.
  4. Let steak rest, then cut into cubes and set aside.

Step 3: Cook the onion

Ingredients:

  • 1 sweet yellow onion chopped
  • 2 tablespoons balsamic vinegar
  • 1 tsp honey
  • pinch of salt

Instructions:

  1. Chop up onion and saute until translucent.
  2. Add balsamic vinegar, salt, and honey and cook until absorbed.

Step 4: Build your quesadilla

  1. Butter your cast iron skillet or pan.
  2. Build it! Tortilla, cheese, steak, onion, cheese.
  3. Fold in half and paint butter on top.
  4. Flip and cook until cheese is melted through!
